This Chili Lime Roasted Veggie & Jackfruit Bowl with Jalapeno Cream Sauce has so much flavor! The veggies and jackfruit are roasted in a one sheet pan and dressed with creamy jalapeno sauce. You can also add the chili lime roasted veggie and jackfruit mixture to tacos or burritos! This is a vegan, gluten-free and soy-free recipe.

Mix the jackfruit and onion with homemade taco spice, tomato paste and lime juice and bake. You can use shredded soy curls, seitan, or hearts of palm as a substitute.

Toss the cauliflower with taco seasoning, garlic, and lime zest and bake. Use other seasonal veggies to your preference.

Spice the peppers and other veggies(such as zucchini, root veggies, seasonal veggies) with salt and pepper and bake.

Jalapeno Cream Sauce is a blend of pickled jalapenos, brine from the jalapenos, cashews, garlic, salt and optional nutritional yeast for cheesiness. This creamy sauce balances out the smoky spicy flavors of the taco seasoned bowl. You can also use thinned-out vegan sour cream as the dressing.
